Corn in Milk
Ingredients
- Sweet Corn Sticks 4 pieces
- Milk 10 fl oz
- Water 5 qt
- Butter 5 oz
- Sugar to taste
- Coarse Salt to taste
Step-by-Step Guide
Step 1
Prepare all the ingredients.
Step 2
Remove the kernels and the silky threads from the corn.
Step 3
Take a pot of suitable size; if the corn cobs are too large, cut them in half or into thirds.
Step 4
Fill the pot halfway with water and bring it to a boil.
Step 5
Pour in the milk and add a piece of butter (50 g). Keep the remaining butter in the refrigerator; it should be cold and firm.
Step 6
If the corn is not sweet, add a spoonful of sugar to the mixture. There is no need to add salt, as it will make the kernels tough.
Step 7
Add the corn to the milk mixture and bring to a boil.
Step 8
Boil for 15–20 minutes. The exact time depends on how young the corn is. Check for doneness by piercing one of the kernels with a toothpick.
Step 9
Drop the butter into a bowl with sea salt.
Step 10
Grate hot corn with cold butter and salt, and eat immediately.
