Ingredients

  • Semolina 5 oz
  • Sugar 1 tablespoon
  • Coconut Milk 10 fl oz
  • Orange zest ½ teaspoon
  • Grated Ginger Root ¼ teaspoon
  • Pineapple 1 tablespoon
  • Coconut flakes to taste

Step-by-Step Guide

Step 1

Pour the coconut milk into a saucepan. Add the ground ginger, lime zest, and sugar. Place over medium heat and heat until boiling. Remove from heat and quickly strain the milk while it is still warm. Return to heat.

Step 2

Gradually sprinkle the semolina into the hot milk, stirring. Cook over high heat for about 5 minutes until thickened. Stir the porridge constantly to prevent it from sticking and forming lumps.

Step 3

Remove the porridge from heat. Stir in the pineapple candies. Sprinkle with coconut flakes on top and serve.
