Coconut Rice Porridge with Strawberries

Description

You can use frozen strawberries (that's what I used), but you need to thaw them beforehand (this will take about 2-3 hours at room temperature). Currently, there are no photos of the recipe, as the porridge was so delicious that it was finished before I could take a picture :)))

Ingredients

  • Round Rice 5 oz
  • Coconut Milk 5 fl oz
  • Strawberries 5 oz
  • Lime 1 piece
  • Brown Sugar to taste
  • Salt to taste

Step-by-Step Guide

Step 1

Grate the lime zest using a fine grater. Set aside.

Step 2

Chop the strawberries coarsely, sprinkle with brown sugar, and drizzle with lime juice. Let them sit while the rice cooks.

Step 3

Cook the rice in 350 ml of boiling water with a pinch of salt over low heat, covered, for 20 minutes. Add some brown sugar and coconut milk. Stir and cook covered for another 20 minutes.

Step 4

Place the strawberries on top of the rice along with the juice. Remove from heat, cover, and let the strawberries warm up for 3-4 minutes. Serve immediately, sprinkled with lime zest.
