Coconut Rice Porridge
Ingredients
- Boiled White Round Rice 5 oz
- Coconut Milk 15 fl oz
- Desiccated coconut 0 oz
- Ground Cinnamon a pinch
- Grated Ginger Root 0 oz
- Vanilla salt to taste
- Coconut flakes 0 oz
Step-by-Step Guide
Step 1
Soak the rice in water up to two fingers deep and cook over low heat. When the water evaporates, add the coconut milk and continue cooking the porridge until done (you may need to add a little more water).
Step 2
10 minutes before it's done, add the spices, grated ginger root, and shredded coconut.
Step 3
Serve in bowls, garnish with coconut flakes and a small piece of butter, and add sugar/honey to taste in the finished porridge.
