Coconut oatmeal with matcha and almonds

Ingredients

  • Ground Oats 5 oz
  • Sugar 2½ tablespoons
  • Coconut Milk 20 fl oz
  • Unsweetened shredded coconut 4 teaspoons
  • Green tea powder 1 teaspoon
  • Chopped almonds to taste

Step-by-Step Guide

Step 1

In a saucepan, combine coconut milk and sugar. Place over medium heat and bring to a boil. Add the oats and cook, stirring, for about 5–7 minutes until thickened. Remove from heat and stir in 1.5-2 teaspoons of matcha green tea powder (adjust the amount of matcha depending on the color you want to achieve: the more you use (2 teaspoons), the brighter the color and more pronounced the green tea aroma. Less (1 teaspoon) will yield a more pastel color and a more neutral aroma). Stir in 2 teaspoons of coconut flakes, mix well, cover, and let sit for a couple of minutes.

Step 2

Serve the oatmeal topped with almonds and the remaining coconut flakes.
