Coconut oatmeal with mango and candied ginger

Ingredients

  • Ground Oats 5 oz
  • Sugar 2 tablespoons
  • Coconut Milk 20 fl oz
  • Salt a pinch
  • Grated Ginger Root ½ teaspoon
  • Lime Juice to taste
  • Mango 1 piece
  • Unsweetened shredded coconut 1 tablespoon
  • Candied fruits to taste

Step-by-Step Guide

Step 1

Peel the ripe mango. Depending on its ripeness, the skin will come off more easily. Remove the pit. Cut the mango into cubes and set aside in a separate plate.

Step 2

In a pot, combine coconut milk, sugar, ground ginger, and a pinch of salt. Place over medium heat and bring to a boil. Stir in the oats and cook, stirring, for about 5–7 minutes until thickened. Remove from heat and stir in the mango pieces, coconut flakes, and add a bit of lime juice. Return to low heat for 1 minute. Mix well. Then finally remove from heat, cover with a lid, and let sit for a couple of minutes.

Step 3

Serve the oatmeal, garnished with candied ginger.
