Cocktail Onions in Balsamic Vinegar with Pomegranate Seeds
Ingredients
- Spanish onions 30 oz
- Olive Oil 2 tablespoons
- Coarse Salt to taste
- Chicken Broth 1½ cups
- Red Grape Juice ¼ cup
- Brown Sugar 1 teaspoon
- Balsamic Vinegar ¼ cup
- Crème fraîche 3 tablespoons
- Pomegranate Seeds ½ cup
Step-by-Step Guide
Step 1
Place the onions in boiling water for 1 minute. Drain and cool. Peel while keeping their shape.
Step 2
Heat the oil in a skillet over medium heat. Add the onions and sprinkle with salt and pepper. Sauté for 12 minutes, then add the broth, wine, vinegar, and brown sugar. Bring to a boil, reduce heat, cover, and simmer for 15 minutes. Increase heat and cook, stirring, for another 18 minutes until the onions are tender and the liquid thickens.
Step 3
Add the crème fraîche, cook for 2 minutes, season with salt and pepper. Transfer to a bowl and sprinkle with pomegranate seeds.
