Step-by-Step Guide

Step 1

Beat the eggs in a bowl using a fork. Avoid over-beating, as this can make the mixture too airy, resulting in a tough omelet. Season with salt and pepper.

Step 2

Heat a frying pan with a diameter of 16–18 cm over medium heat. Add oil and heat until it starts to foam. Pour in the eggs. Shake the pan to ensure the eggs evenly cover the bottom. Cook for 1–2 minutes, stirring with a spatula to mix the oil and eggs. Do not cook the omelet for too long. As soon as it sets on the bottom but remains runny on top, it is ready.

Step 3

When the omelet begins to slightly settle and soften, add a little salt and pepper, then remove from heat.

Step 4

Fold the omelet from both opposite ends to form a rectangle. Then gently slide it off the skillet onto a warm plate. Using a clean towel, roll the omelet once more so that it resembles a thick cigar. Season with pepper and serve immediately.
