Description
Instead of 4 small omelettes, you can make 1 large one and divide it into 4 equal parts before serving.
Ingredients
- Bittersweet Chocolate 5 oz
- Cream 5 fl oz
- Sugar 5 oz
- Butter 4 tablespoons
- Egg white 4 pieces
Step-by-Step Guide
Step 1
Break the chocolate into small pieces and place them in a small saucepan with the cream and sugar. Set over medium heat and stir thoroughly, but do not bring to a boil, until the sugar is completely dissolved and the chocolate is melted.
Step 2
Lightly beat the eggs with a fork, combine with half of the chocolate-cream mixture, and mix well.
Step 3
In a small skillet (10 cm in diameter) over medium heat, melt 1 tablespoon of butter. When the foam subsides, pour a quarter of the egg mixture into the skillet. Occasionally, gently push the edges of the omelette towards the center of the skillet. When the omelette is ready, lift one edge with a spatula, fold it in half, and place it on a plate. Prepare 3 more omelettes in the same way. To keep the omelettes warm, they can be covered with foil.
Step 4
Before serving, drizzle the omelettes with the remaining chocolate-cream sauce. If the sauce has cooled, it can be gently reheated over medium heat without boiling.
