Ingredients

  • Chicory 6 pieces
  • Red Grape Juice 5 fl oz
  • Sugar 2 tablespoons
  • Salt to taste
  • Vegetable Oil 2 tablespoons
  • Grated Pecorino Pepato Cheese 5 oz

Step-by-Step Guide

Step 1

Cut the chicory lengthwise into 4 pieces.

Step 2

Heat the vegetable oil (non-aromatic!) in a skillet — use 1 tablespoon for each portion that fits in the skillet, as chicory absorbs very little oil.

Step 3

Place the chopped chicory in the skillet and fry until only one side is browned. Once nicely browned, flip to the other side; sprinkle with sugar, season with salt and freshly ground pepper, and drizzle with wine (enough for the next portion of chicory as well). Now stir, but not with spatulas; toss it by shaking the skillet sharply.

Step 4

Finish frying the chicory and transfer it to a serving dish.

Step 5

Arrange the chicory on a baking sheet, sprinkle with cheese, and place in an oven preheated to 355°F for 10-15 minutes.
