
Chickpea Omelette

Description
The texture is indeed like that of an omelette. But you can achieve it without using eggs, simply by mixing hemp, chickpea, and oat flour.
Ingredients
- Ground Flaxseeds 1 tablespoon
- Oat Flour 1 tablespoon
- Chickpea Flour 0.3 cup
- Water ½ cup
- Salt ¼ teaspoon
- Ground Dried Garlic to taste
- Turmeric a pinch
- Baking Powder ½ teaspoon
- Ground Black Pepper ½ teaspoon
- Spinach 0 oz
Step-by-Step Guide
Step 1
In a bowl, whisk together the flaxseeds with ¼ cup of warm water and let sit for 5 minutes.
Step 2
Mix the baking powder and chickpea flour. Add the oat flour, salt, spices, flaxseeds, and ¼ cup or more of water, and mix thoroughly.
Step 3
Optionally, add vegetables, jalapeños, herbs, and mix again.
Step 4
Heat a skillet over medium heat and drizzle with oil.
Step 5
Add the mixture to the skillet and carefully spread it with a spatula.
Step 6
Cover with a lid and cook for 7 minutes.
Step 7
Remove the lid, add a few drops of oil to the edges of the omelette, and cook for another 5–7 minutes.
Step 8
Flip and cook for another 5–6 minutes.
