
Chickpea, Olive, and Red Onion Appetizer

Description
This appetizer is great served as sandwiches. For this, spread a little tahini on one toasted slice, then add a couple of pieces of red bell pepper and the chickpea mixture. Top with a second slice and press down slightly. Cut in half and serve.
Ingredients
- Chickpea 15 oz
- Pitted olives 2 tablespoons
- Spanish onions 1 head
- Chopped Sage Leaves 1 tablespoon
- Lemon ½ piece
- Salt to taste
- Ground Black Pepper to taste
- Olive Oil to taste
Step-by-Step Guide
Step 1
Prepare all the ingredients.
Step 2
In a small bowl, mix the chickpeas, finely chopped olives, finely chopped red onion, parsley, and the juice and zest of half a lemon.
Step 3
Add salt and pepper to taste.
Step 4
Slightly mash the mixture with a fork or potato masher (the mixture should not look like puree, but should hold together easily).
Step 5
Then add a good amount of olive oil.
Step 6
Mix well and serve.
