
Chicken Terrine with Ham and Pistachios

Ingredients
- Skin-On Chicken Breasts 2 pieces
- Garlic 2 cloves
- Chicken Thighs 2 pieces
- Shallot 2 pieces
- Smoked Ham on the Bone 5 oz
- Unsalted peanuts, shelled 0 oz
- Chicken Egg 1 piece
- Salt to taste
- Ground Black Pepper to taste
- Rosemary to taste
- Breadcrumbs 0 oz
- 10% cream 5 fl oz
- Semi-Smoked Sausage 5 pieces
Step-by-Step Guide
Step 1
Remove the skin and fat from the chicken thighs, separate the meat from the bone and cartilage, cut into cubes, and blend in a blender.
Step 2
Cut the chicken breasts into large cubes and blend in a blender.
Step 3
Add the shallots and garlic to the blender and blend again. Transfer the resulting mixture to a bowl.
Step 4
Soak the breadcrumbs in cream, mix well, and let them soften for five minutes, stirring occasionally.
Step 5
Shell the pistachios, pour boiling water over them, and let them sit for five minutes. Then remove the skins and chop them with a knife.
Step 6
Add salt, pepper, spices, egg, soaked breadcrumbs, and cream to the mixture and knead well.
Step 7
Add the pistachios and diced ham to the mixture and mix.
Step 8
Line the mold with strips of bacon.
Step 9
Place the mixture into the mold and press down firmly.
Step 10
Bake in an oven preheated to 355°F for 30 minutes.
Step 11
Remove from the mold after it has completely cooled.
