Description
The simplest recipe where chicken skin reaches a delightful crispiness. It should be cooked just like fatty bacon — covered with parchment paper. This way, the chips maintain their shape and rid themselves of excess fat. A creamy mousse with lemon zest beautifully complements and refreshes the chips, making the dish feel less like a concentrate of fat.
Ingredients
- Chicken skin with fat 1 piece
- Semi-soft cream cheese 0 oz
- Thyme 1 sprig
- Lemon 1 piece
- Salt to taste
Step-by-Step Guide
Step 1
Prepare all the ingredients.
Step 2
Remove the skin from the chicken, using a knife to assist you. The recipe only requires the skin; you can use the rest of the chicken to prepare other dishes.

Use a knife to trim excess fat from the inside of the skin.
Step 4
Cut the skin into large pieces.
Step 5
Place the stretched pieces of skin on a baking tray lined with parchment paper. Sprinkle with salt.

Place a second sheet of parchment paper on top. Press down with a second baking tray.
Step 7
Bake the skin in the oven at 355°F for 10–15 minutes, until golden brown and crispy.
Step 8
Prepare the filling. Remove the leaves from the thyme sprigs and chop them finely.

In a bowl, mix together the cream cheese, chopped thyme, and the zest of half a lemon. Add salt and squeeze in a little lemon juice.
Step 10
Place the finished chips on paper towels to absorb excess grease. If needed, sprinkle with a little more salt.

Place the filling on the prepared chips.
Step 12
Garnish with black ground pepper and remaining lemon zest.
