The simplest recipe where chicken skin reaches a delightful crispiness. It should be cooked just like fatty bacon — covered with parchment paper. This way, the chips maintain their shape and rid themselves of excess fat. A creamy mousse with lemon zest beautifully complements and refreshes the chips, making the dish feel less like a concentrate of fat.

  • Chicken skin with fat 1 piece
  • Semi-soft cream cheese 0 oz
  • Thyme 1 sprig
  • Lemon 1 piece
  • Salt to taste

Prepare all the ingredients.

Remove the skin from the chicken, using a knife to assist you. The recipe only requires the skin; you can use the rest of the chicken to prepare other dishes.

Use a knife to trim excess fat from the inside of the skin.

Cut the skin into large pieces.
