Ingredients

  • Butter 5 oz
  • Parsley 5 oz
  • Chicken fillet 4 pieces
  • Pitted olives 5 oz
  • Olive Oil 2 tablespoons

Step-by-Step Guide

Step 1

Preheat the oven to 390°F.

Step 2

Mash half of the olives and chop finely. Mix in a bowl with parsley and butter (the olives should be marinated in oil. These are usually sold in glass jars or airtight packages and are significantly more expensive than regular ones in tin cans).

Step 3

Place the chicken breasts between two sheets of plastic wrap or parchment paper and gently pound with a meat mallet or rolling pin.

Step 4

Spread the olive, oil, and parsley mixture evenly over the pounded chicken breasts, roll them up, and secure with cocktail sticks or toothpicks. You can also use kitchen twine for better securing.

Step 5

Place the rolls in a baking dish, drizzle with olive oil from the container with olives, and bake in the oven for 45–55 minutes, or until the meat is tender and clear juices run out when pierced.

Step 6

Remove the rolls from the oven and take out the cocktail sticks and twine. Slice and serve on warmed plates, garnished with the remaining olives.
