Chicken roll-ups with mozzarella, spinach, and sun-dried tomatoes
Ingredients
- Spinach 5 oz
- Ricotta cheese 5 oz
- Sun-Dried Tomatoes 5 oz
- "Petelinka Thigh Fillet" 10 pieces
- Melted Cheese 5 oz
- Olive Oil 0 fl oz
- Oregano to taste
- Ground Black Pepper to taste
- Salt to taste
Step-by-Step Guide
Step 1
Prepare all the ingredients.
Step 2
In a blender, combine the spinach with sun-dried tomatoes, ricotta, and oregano. Season with salt and pepper to taste.
Step 3
Cover the chicken medallions with plastic wrap and pound them with a meat mallet.
Step 4
Season the meat with salt and pepper on both sides.
Step 5
Place the spinach and tomato filling on each medallion.
Step 6
Place a small ball of mozzarella on the filling.
Step 7
Roll up the rolls and secure them with toothpicks.
Step 8
Transfer the rolls to a baking sheet, drizzle them with olive oil, and place in an oven preheated to 355°F for 20–25 minutes. Before serving, remove the toothpicks.
