Description
Chicken pâté is great for any occasion, especially on your favorite bread. The pâté is easy to prepare: the ingredients are sautéed and then blended together. For added sophistication and aroma, you can add some brandy.
Ingredients
- Chicken Liver 15 oz
- Onion 1 head
- Garlic 1 clove
- Vegetable Oil 0 fl oz
- Butter 10 oz
- Bay leaf 1 piece
- Thyme 1 sprig
- Cognac 0 fl oz
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide

Prepare the necessary ingredients.

Slice the onion into thin strips.
Step 3
Prepare the liver.
Step 4
In a saucepan, heat 30 grams of butter and 30 grams of vegetable oil.
Step 5
Add the onion, sliced into thin strips, and sauté until translucent.
Step 6
Add a garlic clove, bay leaf, and thyme. Sauté, stirring for a couple of minutes.
Step 7
Add the liver, sauté it for one minute, then pour in the cognac, and season with salt and pepper. Cook for another 4 to 6 minutes, until the liver is done.

Remove the bay leaf and sprig of thyme, then transfer the liver, onion, and garlic to a blender. Blend until you achieve a coarse puree. Gradually add the butter directly into the running blender and whip until you reach a smooth, homogeneous texture.
Step 9
Transfer the pâté into jars or ramekins. Cover with plastic wrap, ensuring that the wrap adheres tightly to the pâté.
Step 10
Place the pâté in the refrigerator until completely cooled. Serve on your favorite bread.
