Chicken Liver Pâté with Carrots
Ingredients
- Chicken Liver 20 oz
- Carrot 1 piece
- Onion 1 piece
- Butter 0 oz
Step-by-Step Guide
Step 1
Wash the liver, trim off any excess (fat, membranes, etc.), season with salt, and let it rest.
Step 2
While the liver is resting, grate the carrot and sauté it in butter for about 3–5 minutes.
Step 3
Chop the onion, add it to the carrots, and sauté for another 3–5 minutes.
Step 4
Add the liver to the vegetables and simmer until cooked through (about 10 minutes).
Step 5
Then, while everything is still hot, pass it through a meat grinder twice, together with the butter (I added 30 g, but the recipe generally calls for more, to taste).
