Chicken Liver Parfait
Ingredients
- Butter 0 oz
- Shallot 2 pieces
- Chicken Liver 20 oz
- Brandy 1 tablespoon
- Cream 3 tablespoons
- Croutons 15 oz
- Cornichons 8 pieces
- Spices to taste
Step-by-Step Guide
Step 1
Heat a large skillet over medium heat. Melt the butter, add the chopped shallots, and sauté, stirring, for 4-5 minutes until softened. Transfer to a blender.
Step 2
In the skillet, add the liver and cook over high heat, stirring constantly, for 4-5 minutes until browned on the outside but pink inside. Transfer to the blender with 2 tablespoons of the juices from the skillet, add the cream and brandy, then the spices. Blend for 4-5 minutes until smooth. Transfer to a bowl or plate and cover with plastic wrap. Refrigerate for 4 hours.
Step 3
Before serving, place a teaspoon of the parfait on thin croutons and top each with a slice of diagonally cut cornichon.
