Chicken Liver Mousse with Cognac

Ingredients

  • Chicken Liver 15 oz
  • Scallions 1 bunch
  • Cognac 5 fl oz
  • Whipped Cream 5 fl oz
  • Salt ½ teaspoon
  • Ground Black Pepper a pinch
  • Ground clove a pinch
  • Butter 5 oz
  • Ground Cumin a pinch

Step-by-Step Guide

Step 1

Cut the liver into small pieces.

Step 2

Melt 2 tablespoons of butter in a skillet, add the liver and green onions, and sauté for 2-3 minutes until the liver is cooked but still slightly pink inside. Transfer everything to a blender.

Step 3

Pour the cognac into the skillet and cook until the volume reduces to 3 tablespoons. Pour it over the liver.

Step 4

Add the cream and spices to the blender, cover with a lid, and blend until smooth. Then add the remaining softened butter and blend again.

Step 5

Pass the mixture through a sieve, season with salt and pepper to taste.

Step 6

Transfer to a bowl or jar, cover with parchment paper, and refrigerate for 2-3 hours.
