Chicken Eskimo
Ingredients
- Mayonnaise 0 oz
- Chicken fillet 5 oz
- Chicken Egg 2 pieces
- Wheat Flour 2 spoons
- Hazelnut 5 oz
- Demi-Glace Sauce 5 fl oz
- Red Grape Juice 5 fl oz
- Sugar 0 oz
- Salt to taste
- Balsamic Vinegar 0 fl oz
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
In a saucepan, caramelize the sugar, pour in the wine, and reduce it by two-thirds. Add the demi-glace and balsamic vinegar, and simmer on the heat for ten minutes.
Step 2
Finely chop the chicken fillet. Mix in the mayonnaise, eggs, flour, salt, and pepper. Preheat the oven to 195°F.
Step 3
Divide the chicken mixture in half and place it on plastic wrap. Tightly roll it into cylinders with a diameter of 2–3 cm, tying the ends of the wrap. Place in the oven for about fifteen minutes (the internal temperature of the resulting rolls should reach 160°F). Allow to cool.
Step 4
Trim the ends of the plastic wrap, remove the chicken popsicle, and insert it onto popsicle sticks – just like a real popsicle.
Step 5
Finely chop the hazelnuts. Dip the ice cream in the wine sauce and coat it with the nuts. Serve with the sauce and chopped hazelnuts.
