Ingredients

  • Garlic 4 cloves

  • Vegetable Oil 5 fl oz
  • Sugar 2 teaspoons
  • Baking Tomatoes 25 oz
  • Ground Black Pepper ½ teaspoon
  • Ground meat 25 oz
  • Mild Chili Spice ½ teaspoon
  • Ground Cumin 1 teaspoon
  • Oregano 1 teaspoon
  • Ground coriander 1 teaspoon
  • Cheshire Cheese 20 oz
  • Tortillas 5 pieces

Step-by-Step Guide

Step 1

Let's start with the sauce. For it, peel the onion and garlic, remove the seeds from the chili peppers, and finely chop everything.

Step 2

In a skillet over medium heat, heat the vegetable oil and sauté the chopped vegetables for about five minutes, stirring. Then add the canned tomatoes, cutting them into not too small pieces. Add salt, sugar, and black pepper to taste, mix, and heat for 5–7 minutes. The sauce is ready.

Step 3

In another skillet over high heat, melt a little vegetable oil and sauté the ground chicken in it. After 10–15 minutes of frying, all the liquid from the meat will evaporate, and it will start to brown. At this point, add the ground hot red pepper, salt to taste, oregano, coriander, and cumin. You can also just use a spice mix for Mexican dishes. Fry for another 5 minutes until browned.

Step 4

Now, grate the cheese on a coarse grater and chop the cilantro.

Step 5

It's time to assemble. Preheat the oven to 355°F. Take a baking dish and pour half of our sauce on the bottom.

Step 6

Warm the tortillas slightly in the microwave to make them more pliable. Take a tortilla, place 2–3 tablespoons of the sautéed ground chicken on one half, add grated cheese (don’t be stingy; you can never have too much cheese! but leave a little to sprinkle on top), and sprinkle with chopped cilantro.

Step 7

Carefully roll the tortilla into a tube and place it seam-side down on the sauce. Repeat this for 5 times (or as many tubes as you can fit).

Step 8

When all the enchiladas are in the dish, pour the remaining sauce over them, sprinkle with cheese and cilantro.

Step 9

Place the dish in the preheated oven for about 20 minutes, until the cheese is completely melted and starts bubbling.
