  • Chicken fillet 20 oz
  • Corn Flour for Polenta 0 oz
  • Chicken Egg 1 piece
  • Salt ½ teaspoon
  • Mild Chili Spice ¼ teaspoon
  • Vegetable Oil 15 fl oz
  • Marinated cherries 5 oz
  • Orange Bell Peppers 1 piece

Step-by-Step Guide

Step 1

Make a uniform mince from the chicken fillet using a blender.

Step 2

Add the egg to the mince and mix well.

Step 3

Add corn flour (1 tablespoon), salt, and a little chili. Mix again.

Step 4

On a floured surface, roll the mixture into balls slightly larger than a walnut. Use a teaspoon of the mixture for each ball.

Step 5

Heat the frying oil in a saucepan.

Step 6

Drop the balls in small batches (5-7 pieces) and fry until light golden brown for about 3 minutes.

Step 7

Remove the cooked croquettes with a slotted spoon and place them on a towel or napkin to absorb excess oil. Repeat this process with the remaining mixture.

Step 8

Cut the pepper into squares about the size of the croquettes.

Step 9

Wash and dry the cherry tomatoes.

Step 10

Thread the croquettes onto wooden skewers alternating with the vegetables.

Step 11

It is best to eat the croquettes immediately while they are warm.
