Chicken and Mushroom Carbonara Spaghetti
Ingredients
- Whole egg 2 pieces
- Olive Oil 1 tablespoon
- Chicken fillet 2 pieces
- Semi-Smoked Sausage 6 pieces
- Fresh Mushrooms 10 oz
- Spaghetti 15 oz
- Dry White Wine 5 fl oz
- Cream (40%) 5 fl oz
- Chopped Sage Leaves 0 oz
Step-by-Step Guide
Step 1
Heat a large skillet over medium heat and add olive oil. Sauté the diced chicken until golden brown. Transfer to a plate.
Step 2
In the skillet, add the finely chopped bacon and diced mushrooms and sauté for about 5 minutes.
Step 3
Cook the pasta in boiling water until al dente.
Step 4
Meanwhile, reduce the heat under the skillet with the mushrooms and pour in the wine and cream. Bring to a boil, add the chicken, and cook for another 8–10 minutes. Remove from heat and cool for 1–2 minutes. Then, add the yolks one by one, whisking constantly with a fork.
Step 5
Transfer the pasta to the skillet and mix well. Season with salt and pepper and sprinkle with parsley.
