Chicken and eggplant quesadilla
Ingredients
- Tomatoes 0 lbs
- Chicken fillet 3 pieces
- Onion 1 head
- Eggplants 1 piece
- Olive Oil 2 spoons
- Herbs to taste
- Tortillas 2 pieces
- Cheese Spread 5 oz
Step-by-Step Guide
Step 1
Finely chop the chicken fillet, tomato, and onion. Peel the eggplant and chop it finely as well. Sauté everything in olive oil. At the end, season with salt and sprinkle with herbs.
Step 2
Place the tortilla on a plate, then layer thin slices of soft cheese on top. Add the prepared filling over the cheese, and then cover it with more cheese and a second tortilla.
Step 3
Heat in the microwave for 1–2 minutes, or in the oven, wrapped in foil.
Step 4
Serve with salsa or guacamole.
