Ingredients
- Cherry 1⅕ kg
- Cider 5 fl oz
- Honey 5 oz
- Brown Sugar 5 oz
- Salt 1 tablespoon
- Grated Ginger Root 0 oz
- Cayenne Pepper a pinch
- Ground Dried Garlic ¼ spoons
- Ground clove ¼ spoons
- Cinnamon 1 piece
- Lemon ½ pieces
Step-by-Step Guide
Step 1
Combine the pitted cherries in a saucepan with vinegar, honey, and sugar, and bring to a boil while stirring. Reduce the heat to low and simmer for twenty minutes. Remove from heat and puree using an immersion blender, then return to the saucepan and add grated ginger, all the spices, a cinnamon stick, and the zest of half a lemon. Cook, stirring, for one hour and fifteen minutes until thickened.
Step 2
Let the ketchup cool and transfer it to a jar. Store in the refrigerator for three to four weeks.
