Description

The method for preparing a soufflé is always the same — only the ingredients that enhance the main flavor change.

Ingredients

  • Butter 5 oz
  • Wheat Flour 4 tablespoons
  • Wheat Flour 4 tablespoons
  • Milk 15 fl oz
  • Gruyère cheese 5 oz
  • Farm fresh eggs 5 pieces
  • Salt to taste
  • Egg white 4 pieces

Step-by-Step Guide

Step 1

Preheat the oven to 355°F. Generously grease the inner surface of a soufflé dish (22 cm in diameter) with butter. Melt the butter in a pan, add both types of flour, and cook, stirring constantly, for a couple of minutes. Gradually add the milk in small amounts. Bring the mixture to a boil, reduce the heat, and simmer without allowing it to boil again for another 5 minutes. Remember to stir the mixture constantly.

Step 2

Remove from heat and add the cheese to the mixture. Allow it to cool slightly. Then, gradually stir in the egg yolks (one at a time) and season with salt to taste. In a clean, dry bowl, beat half of the egg whites until stiff peaks form. Gently fold the egg whites into the mixture. Now repeat this process with the remaining egg whites.

Step 3

Pour the mixture into the dish and bake for 20 minutes, then increase the temperature to 430°F and continue baking for another 10–15 minutes. The soufflé should rise and become golden brown. It is important to serve the dish immediately after cooking. If you wait even a few minutes, the soufflé will deflate.
