- Cheshire Cheese 5 oz
- Aged gouda cheese 5 oz
- Butter 0 oz
- Wheat Flour 0 oz
- Milk 20 fl oz
- Nutmeg to taste
- Dijon Mustard to taste
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Grate the cheeses using a medium grater.
Step 2
Melt the butter in a heavy-bottomed saucepan.
Step 3
Add the flour and stir the sauce for 5 minutes over medium heat.
Step 4
Gradually pour in the milk, continuing to stir the sauce.
Step 5
Stir the sauce over medium heat until it thickens. Make sure the sauce is smooth and free of lumps.
Step 6
Add salt and pepper to taste.
Step 7
Add nutmeg and just a tiny pinch of mustard powder.
Step 8
Remove the saucepan from the heat and add a quarter of the grated cheese.
Step 9
Stir the sauce until the cheese melts. Then gradually add the remaining cheese.

Stir the sauce until all the cheese is melted.

The finished sauce should be smooth, thick, uniform, and glossy.
