Cheese Pancakes with Sour Cream
Breakfasts • Russian
Description
Cheese pancakes with sour cream are a fantastic way to turn cottage cheese into a dessert. Vanilla, a touch of sugar (the amount can be adjusted), and butter combine these flavors beautifully. You can add dried fruits or berries—let your imagination run wild. We are sharing a basic recipe, and when you prepare it, pay attention to the fact that these cheese pancakes specifically require semolina: it will be the main ingredient for the pancakes. All-purpose flour is only needed to coat the finished ball before placing it on the skillet.
Ingredients
- Cottage cheese 20 oz
- Chicken Egg 1 piece
- Sugar 2 spoons
- Semolina 2 spoons
- Salt a pinch
- Vanillin 0 oz
- Wheat Flour to taste
- Sour Cream to taste
- Vegetable Oil 0 fl oz
- Butter 0 oz
Step-by-Step Guide
Step 1
Drain the cottage cheese through a cheesecloth if it is not dry enough. Then blend it in a blender for a smoother texture for the cheese pancakes.
Step 2
Add the egg, sugar, a pinch of salt, and vanilla to the cottage cheese, and mix well.
Step 3
Add semolina, stir again, and let it sit for 10–15 minutes to allow the semolina to swell.
Step 4
Roll the cheese mixture into small balls and coat them lightly in flour.
Step 5
In a skillet, heat vegetable oil and butter.
Step 6
Fry the cheese pancakes on both sides until golden brown.
Step 7
Transfer the syrniki to a baking sheet and place them in an oven preheated to 355°F for 10–15 minutes.
Step 8
Serve the finished syrniki either cold or hot with sour cream.
