You can also vary the density of the pancakes: the less flour you use in the cheese mixture, the more tender they will be. For making cheese pancakes, it's best to use homemade cottage cheese, but if that's not available, choose one with the least moisture. The jam for topping the pancakes is like butter for porridge: you can't go wrong with the amount.
Ingredients
- Cottage cheese 20 oz
- Chicken Egg 1 piece
- Sugar 2 spoons
- Semolina 2 spoons
- Salt a pinch
- Vanillin 0 oz
- Wheat Flour to taste
- Vegetable Oil 0 fl oz
- Jam 0 oz
- Butter to taste
Step-by-Step Guide
Step 1
Drain the cottage cheese through a cheesecloth if it is not dry enough. Then blend it in a blender for a smoother texture for the cheese pancakes.
Step 2
Add the egg, sugar, a pinch of salt, and vanilla to the cottage cheese, and mix well.
Step 3
Add semolina, stir again, and let it sit for 10–15 minutes to allow the semolina to swell.
Step 4
Roll the cheese mixture into small balls and coat them lightly with flour.
Step 5
Heat vegetable and butter in a skillet.
Step 6
Fry the cheese pancakes on both sides until golden brown.
Step 7
Transfer the cheese pancakes to a baking sheet and place them in an oven preheated to 355°F for 10–15 minutes.
Step 8
Serve the finished syrniki cold or hot with your favorite jam.
