There’s nothing better than fluffy and hearty cheese pancakes for a leisurely breakfast. For this dish, you should use dry cottage cheese—ideally, it should contain as little moisture as possible. If you can't find dry cottage cheese, you can remove excess water from any cottage cheese by leaving it in a sieve in the refrigerator overnight. To ensure the dish turns out perfectly, it’s best to pass the cottage cheese through a fine sieve, which will make the pancakes uniform and prevent them from falling apart while frying. Another tip is to add semolina to the cheese mixture: it will hold each pancake together firmly. Berries in this recipe make for the perfect companion: they balance the sweetness of the pancakes and add the necessary tang.
Ingredients
- Cottage cheese 20 oz
- Chicken Egg 1 piece
- Sugar 2 spoons
- Semolina 2 spoons
- Salt a pinch
- Vanillin 0 oz
- Wheat Flour to taste
- Vegetable Oil 0 fl oz
- Fresh Berries 0 oz
- Butter to taste
- Powdered Sugar to taste
Step-by-Step Guide
Step 1
Drain the cottage cheese through a cheesecloth to remove excess liquid if it is not dry enough. Then blend it in a blender for a smoother texture for the cheese pancakes.
Step 2
Add an egg, sugar, a pinch of salt, and vanilla to the cottage cheese, and mix well.
Step 3
Add semolina, stir again, and let it sit for 10–15 minutes to allow the semolina to swell.
Step 4
Shape the cottage cheese mixture into balls and roll them in a small amount of flour.
Step 5
In a skillet, heat vegetable and butter.
Step 6
Fry the cheese pancakes on both sides until golden brown.
Step 7
Transfer the cheese pancakes to a baking sheet and place them in an oven preheated to 355°F for 10 to 15 minutes.
Step 8
Serve the finished syrniki either cold or warm, accompanied by fresh berries and powdered sugar.
