Cheese Flatbread with Basil
Ingredients
- Wheat Flour 2 cups
- Kefir 1 cup
- Chicken Egg 1 piece
- Salt a pinch
- Activated Baking Soda a pinch
- Suluguni Cheese 5 oz
- Feta cheese 0 oz
- Homemade Cheese 5 oz
- Basil 1 bunch
- Butter 0 oz
Step-by-Step Guide
Step 1
Mix the flour, salt, and baking soda in one bowl, add the kefir and egg in the center, and start slowly mixing clockwise. This way, the flour from the edges gradually incorporates into the center. The dough should be very soft and slightly sticky when broken. If the dough is too liquid, you can add a little flour, but it's better to do this while rolling out. Let the dough rest. It can be for half an hour or just while preparing the other ingredients.
Step 2
Grate the cheeses, crumble the feta into small pieces, and mix them into a ball the size of a ping-pong ball.

Wash the basil.
Step 4
Place the dough on a floured surface and knead it a bit. Divide it into 8 equal pieces. If the pieces are too sticky, it's okay.
Step 5
Heat a skillet over medium heat.
Step 6
Roll out a piece of dough into a small circle, place the cheese ball and a few basil leaves in the center, fold the dough over from both sides, press the edges well, and gently roll out the semicircle wider.
Step 7
Add a bit of butter and the flatbread to the skillet and fry on both sides until dark spots appear.
Step 8
Serve while hot, but be careful!
