Description
Cheese blintzes are a delicious and popular dish made from thin, crepe-like pancakes filled with a sweet cheese mixture. They are often served with a side of fruit or a drizzle of honey for added flavor.
Ingredients
- Chicken Egg 5 pieces
- Sugar 5 oz
- Wheat Flour 15 oz
- Milk 0 qt
- Raisins 0 oz
- Cottage cheese 25 oz
- Vanillin 0 oz
- Ghee 0 oz
- Salt to taste
Step-by-Step Guide
Step 1
Soak the raisins in boiling water and leave for 30 minutes. Then, drain the water.
Step 2
Whisk 4 eggs with 30 grams of sugar, add a pinch of salt and sifted flour, and mix. Gradually pour in the milk and knead into a smooth dough. Refrigerate for 20 minutes.
Step 3
Preheat the crepe pan well, brush it with melted butter, and pour in a ladle of the crepe batter, spreading it evenly across the pan. Cook the crepe for 2–3 minutes on one side, then flip it and cook for another 1–2 minutes.
Step 4
Beat the egg and 100 grams of sugar with a pinch of salt and vanilla, then add the cottage cheese and raisins, and mix well.
Step 5
Place a bit of filling at the edge of the pancake, fold in the sides of the pancake, and then roll the pancake into a rectangular flat pastry.
Step 6
In a skillet over medium heat, melt 30 grams of clarified butter and place the pancakes seam-side down, browning for 2–3 minutes on each side.
