- Butter 12 tablespoons
- Pickled Chanterelles 10 oz
- Garlic 1 clove
- Passata Tomato Sauce 1 tablespoon
- Cayenne Pepper a pinch
- Salt to taste
Step-by-Step Guide
Step 1
Melt the butter in a skillet over medium heat. Add finely chopped chanterelles and cook for 10 minutes until the mushrooms start to brown and the butter becomes clear.
Step 2
Add the tomato paste, finely chopped garlic, cayenne pepper, and salt. Cook for another 3-4 minutes until the mushrooms are tender and the butter is golden.
Step 3
Transfer the mixture to a blender and blend until it reaches a paste consistency. Then transfer to a small serving bowl, cover with plastic wrap, and refrigerate until set.
