Celery with Mayonnaise
Ingredients
- Ground Black Pepper to taste
- Salt to taste
- Mustard Greens 1 tablespoon
- Safflower Oil 15 fl oz
- Whole egg 2 pieces
- Champagne Vinegar 2 tablespoons
- Celery salt 4 pieces
Step-by-Step Guide
Step 1
Peel the celery root, cut it in half, and place it in a pot. Cover with water, add a pinch of salt, and bring to a boil. Reduce the heat and simmer for 30 minutes.
Step 2
Meanwhile, prepare the mayonnaise. All components should be at room temperature. Place the yolks in a bowl along with the vinegar or lemon juice and a pinch of salt. Lightly whisk with a whisk or fork, then, while continuously whisking, gradually pour in the oil. The mayonnaise should be thick and smooth.
Step 3
Drain the water from the celery, cut it into strips, mix with the mayonnaise, and add pepper and mustard to taste. Let it sit for 30 minutes before serving to allow the celery to absorb the sauce.
