
Caviar Mayonnaise

Description
Mayonnaise consists of three main ingredients: egg yolk, oil, and acid. The classic recipe leaves room for experimentation: if you replace the yolk with red caviar, you will create caviar mayonnaise. Stir whole caviar pearls into the finished sauce—they will add variety to the texture of the mayonnaise and will pleasantly burst on the tongue.
Ingredients
- Vegetable Oil 15 fl oz
- Lemon ½ pieces
- Red Caviar 5 oz
- Leek 0 oz
Step-by-Step Guide
Step 1
Place three-quarters of the caviar in a bowl and press down with a spoon to burst the pearls and release their juices.
Step 2
Gradually and in small portions, pour in the sunflower oil while whisking with a whisk or spoon, just as you would for mayonnaise. The oil can be any type of vegetable oil, as long as it is refined and odorless.
Step 3
Towards the end, squeeze half a lemon while continuing to whisk. The goal is a creamy mixture in a light pink color.
Step 4
Finely chop and mix in the spring onion, then gently fold in the remaining caviar, being careful not to break it.
Step 5
Serve the salad with a baguette, which can be spread with the sauce, or with cucumber slices that can be dipped into the caviar.
