Cavateddi with Anchovies and Herbs
Ingredients
- Wheat Flour 10 oz
- Olive Oil 3 tablespoons
- Anchovies 3 pieces
- Garlic 1 clove
- Ocean salt to taste
- Parsley 1 bunch
- Basil 1 bunch
- Mint 1 bunch
Step-by-Step Guide
Step 1
Prepare the dough from salted flour and warm water.
Step 2
Form the dough into several sausages (1 cm in diameter and 20–30 cm long). Cut the sausages into pieces of 2–3 cm and flatten each piece with your finger on a lightly floured board to create a small shell — cavateddi.
Step 3
Thoroughly rinse the anchovies, remove the bones, and cut them into pieces.
Step 4
In hot oil, sauté the chopped garlic until fragrant and add the anchovies, previously mashed with a fork.
Step 5
Cook the cavateddi al dente in a large pot of salted boiling water.
Step 6
Transfer the cavateddi to the pan where the anchovies are cooking. Add the herbs — parsley, mint, basil. Mix thoroughly and let it sit for a few minutes.
