Cauliflower with Raisins and Almonds
Ingredients
- Cauliflower 2 heads
- Olive Oil ¼ cup
- Light Raisins, Seedless 5 oz
- Coarse Salt to taste
- Ground Black Pepper to taste
- Chopped almonds 0 oz
- Champagne Vinegar 2 tablespoons
Step-by-Step Guide
Step 1
Cut 2 small heads of cauliflower into florets.
Step 2
Preheat the oven to 430°F.
Step 3
Place the raisins in a bowl and cover with hot water.
Step 4
Spread the cauliflower on 2 baking sheets, drizzle with olive oil, season with salt and pepper. Roast for 10 minutes.
Step 5
Stir the cauliflower and sprinkle with almonds. Roast until tender and golden, about 10 minutes.
Step 6
Drain the raisins.
Step 7
Transfer the cauliflower to a serving dish, sprinkle with raisins and drizzle with vinegar.
