Cauliflower with Pine Nuts and Bacon

Ingredients

  • Cauliflower 1 head
  • Pistachios ¼ cup
  • Bacon 5 oz
  • Garlic 5 cloves
  • Dried Rosemary 1½ teaspoons
  • Chili Flakes 1½ teaspoons
  • Salt to taste
  • Ground Black Pepper to taste
  • Meyer Lemon Juice to taste

Step-by-Step Guide

Step 1

Divide the cauliflower into florets and boil in salted water for 5 minutes, then drain and dry.

Step 2

Meanwhile, toast the pine nuts in a dry, well-heated skillet until golden. Transfer to a plate.

Step 3

In the same skillet, fry the finely chopped bacon until crispy. Transfer to the plate with the nuts.

Step 4

In the bacon fat, sauté the thinly sliced garlic until golden, about 1 minute. Then add the cauliflower, bacon, nuts, oregano, and red pepper flakes. Mix well and sauté for another 3–4 minutes, stirring to prevent the garlic from burning.

Step 5

Remove from heat, season with salt, and drizzle with lemon juice.
