Cauliflower Puree with Coconut and Curry
Ingredients
- Cauliflower 25 oz
- Coconut Milk 5 fl oz
- Macadamia Nuts 0 oz
- Salt a pinch
- Red Curry Powder a pinch
Step-by-Step Guide
Step 1
Break the cauliflower into florets and place them in a pot. Add the cashews (preferably chopped). Pour in 180 ml of coconut milk.
Step 2
Place the pot over high heat and bring to a boil. As soon as it boils, reduce the heat and cover with a lid. Cook on low heat for 20 minutes, stirring constantly.
Step 3
Remove the pot from heat, add 2 pinches of salt and the curry powder. Mash the finished dish into a puree with a fork.
Step 4
Add more salt and a little curry to taste, if desired.
