Ingredients

  • Hazelnut 5 oz
  • Butter 10 tablespoons
  • Cauliflower 3 heads
  • Meyer Lemon Juice 2 tablespoons
  • Coarse Salt to taste
  • Chopped Sage Leaves 2 tablespoons

Step-by-Step Guide

Step 1

Preheat the oven to 355°F.

Step 2

Spread the nuts on a baking sheet and toast for 10 minutes, then transfer to a towel and remove the skins. Roughly chop the nuts.

Step 3

Cut the stem off the cauliflower (it's better to use small heads), but ensure the heads remain intact. Steam or cook in a double boiler until tender, about 20 minutes. Transfer to plates.

Step 4

In a saucepan, melt the butter over medium heat. Add the nuts and cook for 3–4 minutes until the butter turns light brown. Remove from heat and stir in the lemon juice and chives. Season with salt and mix. Drizzle over the cauliflower and serve immediately.
