
Cauliflower and Sour Cream Purée

Description
Chicken broth can be substituted with vegetable broth.
Ingredients
- Cauliflower 1 head
- Chicken Broth 10 fl oz
- Sour Cream 3 tablespoons
- Butter 1 tablespoon
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Rinse the cauliflower well and chop it finely. Transfer to a pot, pour in the broth, and bring to a boil. Reduce the heat and cook for about 10 minutes, until the cauliflower is soft.
Step 2
Using a slotted spoon, transfer the cauliflower to a blender. Add a few tablespoons of broth and blend until smooth.
Step 3
Add the softened butter and sour cream. Season with salt and pepper. Blend again and serve immediately.
