Carrots with Peas
Ingredients
- Salt to taste
- Water 15 fl oz
- Bacon 6 pieces
- Butter 0 oz
- Onion 1 piece
- Carrot 25 oz
- Safflower Oil 10 fl oz
- Pea shoots 5 lbs
Step-by-Step Guide
Step 1
Heat 3 tablespoons of oil in a saucepan, add the onion, and cook over low heat, stirring, for 3 minutes until the onion becomes translucent. Add the carrots and pour in 500 ml of water. Cook for 15 minutes, then add the peas and the tied pods, sprinkle with salt, and cook for another 20 minutes until the vegetables are tender.
Step 2
Before serving, remove the pods, drain all the water from the saucepan, add the butter, and mix until it melts. In a skillet, heat the remaining sunflower oil, add the bacon, and cook for 2–4 minutes on each side until it turns brown.
Step 3
Serve the vegetables on warmed plates, topped with slices of bacon.
Step 4
Remove the peas from the pods. Tie two handfuls of pea pods into a bouquet. Finely chop the onion, and peel and dice the carrots.
