Carrots stuffed with nuts
Ingredients
- Onion 2 heads
- Carrot 20 oz
- Garlic 2 cloves
- Vegetable Oil 2 tablespoons
- Cilantro 2 teaspoons
- Dill 1 teaspoon
- Malt Vinegar 1 teaspoon
- Ground Black Pepper to taste
- Ground clove ½ teaspoon
- Walnuts 0 oz
Step-by-Step Guide
Step 1
Peel the carrots, trim the ends, and rinse. Then, using the tip of a small sharp knife, cut out the core without damaging the integrity. Place the carrots in boiling salted water and cook until soft (without overcooking). Let cool by draining in a colander.
Step 2
Chop the onion and sauté it in vegetable oil. Add the carrot core. Simmer until soft and let cool.
Step 3
Crush the walnuts, cilantro, garlic, and salt.
Step 4
Add the sautéed carrot mixture to the nut mixture, along with pepper, spices, pour in the wine vinegar, and mix well.
Step 5
Stuff the cooled carrots with this mixture, arrange on a plate, and sprinkle with dill.
