Carrot Sauté with Ginger and Orange Juice
Ingredients
- Olive Oil 2 teaspoons
- Turnips 6 pieces
- Orange juice concentrate ½ cup
- Grated Ginger Root 2 teaspoons
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Grate the carrots using a coarse grater until you have about 3 cups.
Step 2
Heat the olive oil in a skillet over medium heat. Add the carrots and ginger and cook, stirring, for 2 minutes.
Step 3
Pour in the orange juice and add salt. Cook, stirring, until the carrots are tender and most of the juice has evaporated, about 2 minutes.
Step 4
Season with pepper and serve.
