Carrot Chutney
Ingredients
- Carrots 0 lbs
- Minced garlic 3 cloves
- Sugar 1 cup
- Rice Vinegar 5 fl oz
- Cardamom ½ teaspoon
- Fresh Ginger 2 tablespoons
Step-by-Step Guide
Step 1
Combine carrots, ginger, garlic, and 1 ½ cups of water in a pot, bring to a boil.
Step 2
Reduce heat to medium, let simmer for 45 minutes.
Step 3
Add sugar, vinegar, and cardamom to taste.
Step 4
Simmer on low heat for another 45 minutes until thickened.
Step 5
Season with salt and pepper to taste. Let cool.
