Carrot-Apple Pancakes with Oats
Ingredients
- Apple 3 pieces
- Carrot 2 pieces
- Ground Oats 5 oz
- Honey 1 teaspoon
- Wheat Flour 1 tablespoon
- Breadcrumbs to taste
Step-by-Step Guide
Step 1
Peel the carrots and chop them in a blender.
Step 2
Heat a skillet, pour in 100 ml of water, add the carrots, and start simmering until cooked.
Step 3
Then chop the peeled apples in a blender and add them to the carrots. Simmer until the water evaporates.
Step 4
Next, add the blended oats, a spoonful of honey, a pinch of salt if desired, and flour, stirring constantly until the mixture thickens.
Step 5
Remove the 'dough' from the heat and transfer it to another container, allowing it to cool.
Step 6
Dip the cold mixture in breadcrumbs (I used some crushed Japanese tempura breadcrumbs) and form pancakes. Fry in vegetable oil over medium heat.
Step 7
Serve with sour cream.
