Caramelized Carrots with Shallots
Ingredients
- Carrot 5 oz
- Shallot 3 pieces
- Coconut Milk 2 tablespoons
- Honey 3 tablespoons
- Salt to taste
- Nutmeg to taste

Step 1
Baby carrots are usually sold whole. If you want to achieve an al dente effect, do not cut them but place them whole. If you have large carrots, slice them into half-rings about 0.5 cm thick.
Step 2
Peel the shallots and slice them into wedges.
Step 3
Heat coconut oil in a pan and add the carrots and shallots, then drizzle with liquid honey, sautéing over medium heat while stirring constantly for about 10 minutes.
Step 4
During this time, the shallots will turn brown but should not burn, and the carrots will remain al dente.
Step 5
Add nutmeg and mix well.
Step 6
Season with salt to taste. Serve as a side dish with meat or duck, or as an appetizer.
