
Capellini with Spicy Vodka Sauce

Description
When adding vodka, make sure to remove the pot from the heat!
Ingredients
- Olive Oil 2 tablespoons
- Garlic 4 cloves
- Shallot 2 heads
- Fresh basil leaves 4 pieces
- Vodka 5 fl oz
- Marinated cherries 25 oz
- Dried Chili Pepper ½ piece
- Paccheri Pasta 20 oz
Step-by-Step Guide
Step 1
Peel and finely slice the garlic and shallots.
Step 2
Heat the oil in a large pot over medium heat, add the garlic, shallots, season with salt and pepper. Cook until golden (about 4 minutes), then add the oregano and chili, heating until fragrant (about 1 minute).
Step 3
Remove the pot from the heat, carefully add the vodka, using a spatula to scrape any stuck vegetables from the bottom and mash them into the vodka until smooth.
Step 4
Return the pot to medium heat, add the halved or quartered tomatoes. Cook, stirring, until the tomatoes begin to break down and release their juices, about 40 minutes. At the end, mash the main mass of tomatoes with a spoon, leaving some tomatoes whole. Remove the sauce from the heat.
Step 5
Meanwhile, bring salted water to a boil, add the capellini and cook according to the package instructions. Drain the pasta, reserving half a cup of the cooking water.
Step 6
Add the pasta to the pot with the sauce, adding a little of the reserved water to keep the dish juicy.
Step 7
If necessary, add more salt and pepper to taste.
