Capellini with Cream Sauce
Ingredients
- Paccheri Pasta 5 oz
- Egg white 2 pieces
- Parmesan Cheese 0 oz
- Olive Oil 2 tablespoons
- Ground Black Pepper to taste
- Salt 1 tablespoon
Step-by-Step Guide
Step 1
Separate the egg whites from the yolks. Cook the capellini according to the package instructions (they really cook very, very quickly, so taste them; you won't want to eat overcooked pasta), and salt the water well.
Step 2
Drain the pasta in a colander, return it to the pot, add the olive oil and freshly ground black pepper (added to hot pasta gives a unique aroma). Add the yolks and quickly 'whisk' with a fork. Then add the parmesan (or hard goat or sheep cheese, which also works very well here) and serve, also sprinkling with parmesan.
